WThis is a simplified version of a cocktail found on a new cocktail list. It's a batch premix that's loaded with the tastes of the festive period, rendering it excellent for your holiday party. Save the extra cordial to use in breakfast cocktails, sweets, or to make more rounds of this cocktail.

Bikini Recipe

Yields 10 servings

To make the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

Ingredients for the Premix (yields 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch

Method

To prepare the Cordial: Put every ingredients into a saucepan, bring to a light boil, agitating until the sugar dissolves. After that, turn off the stove and leave to cool down fully. Decant to a sealable bottle, cap it keeping it chilled, where it will keep for up to a month.

Preparing the Premix: Combine every liquid ingredients in a sizeable container, leave to sit for 60 minutes, then strain best through muslin, making it perfectly clear.

For serving: Pour 85ml from the batch mix to a cocktail shaker filled with ice, and agitate lightly for a minute to cool it down. Filter into a frosted cocktail glass or a similar vessel, top with some cranberries and finish by giving it a brief mist of the essential oil over the drink.
